Breakfast Quiche recipe courtesy of a colleague -- Cindy P.

I just got the premade pie crust, and cut them out to fill in the bottom of the cupcake paper

Put a few holes, brushed with herb butter, baked a little till almost done, cooled and then put in the paper in the muffin pan

Cooked up some sausage (used jimmy dean mild) didn’t add anything

Blanched some asparagus, cut them in small pieces, and sautéed it olive oil, salt pepper

Took 5 different cheeses and mixed together

I used about 7 large eggs (for 12 cupcakes) with a little milk or water, salt, pepper, & a little cayenne, whisked together (I think that made about 2 ½ cups, I poured it in a large measuring cup to help pour in the cupcake holders).

So you have the pie crust at the bottom

Added a spoonful of sausage, then the cheese and then poured the egg mixture in

Or add the asparagus or both, or really whatever you want.

Just don’t fill all the way, maybe ¾’s full,

About 350 for 15-20 minutes, just start watching it after 15 minutes really.
